When a friend brought these to work, I was polite and said oh that's nice.
but when I tried them, they are delicious, and the syrup is not too sweet
try'em if you love pumpkin things like I do!!
Pumpkin Pancakes
2 C Bisquick
2 tbs packed brown sugar
2 tsp ground cinnamon
1 can evaporated milk
½ cup pumpkin pie mix
2 tbsp vegetable oil
2 eggs
1 tsp vanilla
In a large bowl, combine Bisquick and sugar. Mix together. Add evaporated milk, pumpkin, oil, eggs and vanilla. Beat until smooth. Pour onto heated and lightly greased griddle. Cook until top surface in bubbly and edges are dry. Turn, cook until golden brown. Especially good served with homemade apple syrup.
Apple Syrup for Pancakes
1 c sugar
2 tbsp cornstarch
¼ tsp cinnamon
¼ tsp nutmeg
2 c apple juice
2 tbsp lemon juice
¼ c butter or margarine
Mix dry ingredients, add juices and bring to a boil. Then add the butter. Serve hot over pancakes, waffles or French Toast.
NOTE:
In place of the cinnamon and nutmeg, ½ tsp pumpkin pie spice works well.
